Favourite Recipes: Part 2

Here’s another recipe that is very good!  I don’t usually use turkey cutlets (I just get a turkey breast, cut off the skin and bone and dice it).


Turkey Breast Diane – Makes 4 servings

Cooking Spray
2 tsp Lemon-Pepper Seasoning
2 tbsp Lemon Juice
1 tbsp Worcestershire Sauce
1 tsp Mustard (Dijon style)
1 tsp Parsley
1 lb Turkey, cutlets
  1. Coat a large skillet with cooking spray and heat pan over medium heat for 30 seconds
  1. Sprinkle both sides of turkey cutlets with lemon-pepper seasoning.  Place turkey in hot skillet and sauté for 3 to 5 minutes on each side until browned and no longer pink in the centre.
  1. Combine remaining ingredients in a small mixing bowl, mixing well.  Add to pan and cook until heated through.
  1. Garnish with lemon wedges and parsley.

This goes great with sweet potatoes and a salad!
