Favourite Recipes: Part 3

And finally, this one is absolutely great served over your favourite rice!

 

Baked Lemon-Garlic Shrimp –

Makes 4 servings

Ingredients:
¾ lbs Shrimp, raw
12 oz Spinach, fresh
1 lg Red Bell Pepper
2 med Tomatoes
2 cups Summer Squash (yellow)
4 tbsp Olive Oil
1 clove Garlic
1 tbsp Lemon Juice
½ tsp Lemon-Pepper Seasoning
 
Preparation:
  1. Preheat oven to 450 degrees.
  1. Combine all ingredients and place in a casserole dish.  Bake 15 minutes, or until vegetables are warm throughout and shrimp are cooked through.

Total Fat: 15g
Carbs: 10g
Dietary Fiber: 6g
Protein: 22g
Cholesterol: 166mg
