Monday is a great day to kick off your healthy week! One way you can do so is by picking one day a week where you don’t include meat.
Here’s a recipe to help you get started:
Pumpkin Apple Soup – Revised
1/2 c Apple Juice concentrate, thawed
1-2 Apples, washed, cored and diced
1 large Onion, diced
3 Tbsp Olive Oil
2 Tbsp Curry Powder
1 Tbsp Cumin
3-4 Tbsp Brown Sugar
2 Tbsp Food Club Indian Masala spice
1-2 Tbsp Chili Powder
Cayenne powder, to taste
5 C Chicken or Vegetable Stock
3 C Pumpkin puree (fresh, or 1 – 796 ml can)
1 C Cream or Evaporated Skim Milk
Paprika, to taste
1. Saute onions in olive oil for 3 min. Add diced apple and saute 2 min. Sprinkle with curry, cumin, and Indian Masala spice and saute 1 min. Remove from heat and set aside.
2. Put half the mixture in a large pot. Add stock and pumpkin puree. Bring to boil, reduce heat and simmer gently for about 90 min. Stir occasionally.
3. Put other half of onion/apple mixture and apple juice concentrate into food processor or blender. Puree until smooth. Add to soup pot, along with brown sugar, chili powder, cinnamon and cayenne pepper. Adjust spices to YOUR taste!
4. Add cream (evaporated milk) and continue cooking until soup is very hot. DO NOT BOIL again.
Serve with a dash of paprika, if you like!
